I want to use money to track all of my spending. So
rather than one check written to a CC company, I want to
list out the purchases on that credit card individually
and assign a category to that item. This goes for cash
expenditures as well.
What's the best way to do this?

Best way would be to create accounts for each of these. When making
purchases, enter individual transactions against them with the categories
assigned. When paying off the credit card, then add a transfer transaction
from the account you pay the card from.

You can just create a credit card account, the same as you
did with your checking account. And then track all of
your spending on your credit card through that account.

Cash transactions are tricky, and I haven' quite figured
them out. If you use ATM withdrawals, instead of just
putting category cash withdrawal, split those categories
as many times as you want, and as often as you need to
track how you spend the cash you took out. You can go
back and edit that ATM transaction every time you spend
the cash in your wallet. The problem with that is it
doesn't track payees correctly - but the categories are
correct, which for budgeting and spending tracking, is
most important. You can do the same if you make a deposit
and keep cash back - look under the Common Transactions
menu and find: Deposit with Cash Back option. Then just
keep adding as many expenditures in ( ) as you want.
